I just copied your squash/zucchini bread recipe for the 3 HUGE zucchini's my dad bestowed upon me yesterday.  As I was searching, I learned you can go ahead and shred it and then freeze it to use later.  I think I'm going to try it.  I found tons of possibilities in terms of recipes and I'll welcome the fresh-from-the-garden feel come wintertime.</description>
